Well Mine is not as Epic as most, but it's pretty funny.

I was in my lower levels somewhere mid-teens, and trying to work my way into a bandit camp. I was shooting my bow at a bandit in a tower (about 30 degrees up angle), the arrow missed his head, just barely over the top. As I was nocking another arrow I got the message in the top left, sneak attack 3.0x damage.
I was like wtfrak?
After I cleared the Bandit camp and looted everything I went to search for my arrow. It had flown quite a long ways took me a good 5-10 minutes to find it.

It missed the bandit's head by inches, flown all that way, and killed a rabbit! I turned to my wife and said "That's right baby, hittin' bunnies from a 1/4 mile away"

i kept having trouble with a dragon... he would basically fly away and come right back with full health, frustrating... he finally flew up so high that you couldnt even see him anymore, then nose dived strait into the ground until all you could see were his legs, easy kill after that. Also I have seen several flying horses...

my weirdest glitch i have is actually a boosting technique. you get a dagger and go to the greybeards. when they're praying in the hallways, just sneak behind them and keep repeatedly hitting them. they will never see you! you will get your sneak up to level 100 in under 30 minutes

I think mine was when lydia fought a dragon by herself and then got killed instantly by the wolf next to the dead dragon...irony...

Also, I was fighting a giant and we swapped blows, then he died from the burn DoT, and as soon as he fell backwards, a Saber Cat jumped out of his crotch!
